Tarama

Ingredients:

  • 1 tin tarama (pictured)
  • 6 slices stale white bread, moistened then squeezed dry
  • 2 cups olive oil (light olive oil is preferred)
  • 1/2 cup lemon juice
  • iced water

Method:

In a food processor, add the tin of tarama and the bread.  Process until combined.  With the engine running, gradually add a cup of oil, then the lemon juice, and then the remaining oil.  Normally I find it necessary to add iced water to loosen the mixture and create a lovely creamy, white texture.

If the mixture separates at any stage, it is possible to bring it all back to normal by adding iced water towards the end.

Please note all the possible ingredients that are NOT used in our traditional family recipe – eggs, garlic, pepper, salt, onion or spring onion
