This is very easy – but do try it as the flavours are very harmonious. Good served warm or cold. No measurements – it’s really just a method.
Ingredients:
- Pumpkin – Kent or Ironbark, cut into large pieces
- Onion, thinly sliced
- Olive oil
- Raisins – a big handful
- Sugar – a pinch
- Salt & freshly ground black pepper
- Tomato Paste – 1 sachet
- Water
Method:
Braise onions in olive oil. Add pumpkin and combine gently. Add tomato paste, raisins, a pinch of sugar, salt and pepper. Just cover the mixture with water, bring to the boil, reduce heat and simmer gently until the pumpkin is tender. Let cool a little before eating.
