Pumpkin

This is very easy – but do try it as the flavours are very harmonious.  Good served warm or cold.  No measurements – it’s really just a method.

Ingredients:

  • Pumpkin – Kent or Ironbark, cut into large pieces
  • Onion, thinly sliced
  • Olive oil
  • Raisins – a big handful
  • Sugar – a pinch
  • Salt & freshly ground black pepper
  • Tomato Paste – 1 sachet
  • Water

Method:

Braise onions in olive oil.  Add pumpkin and combine gently. Add tomato paste, raisins, a pinch of sugar, salt and pepper.  Just cover the mixture with water, bring to the boil, reduce heat and simmer gently until the pumpkin is tender.  Let cool a little before eating. 147813E7-2759-4CA7-A442-0E782B64B314
