
What to do with a great catch of fresh herring! Other small whole fish can be used, or even fillets – but we normally use herring for this recipe.
Ingredients:
- 6-8 fresh herring
- Plain flour, seasoned with salt and freshly ground black pepper
- Olive oil
- Fresh rosemary sprigs, finely chopped
- Garlic, 2-3 cloves, crushed
- White wine vinegar – about quarter of a cup
- Water – about a cup
- Currants – about half a cup, plumped in hot water and drained before use
Method:
Cover each fish in flour and shallow fry until golden. Place fish on a serving platter and keep warm. Pour any extra oil out of the pan, leaving about a tablespoon. Add garlic, rosemary and a tablespoon of the flour to the remaining oil and cook gently until the flour turns light brown. Add vinegar and currants, and about a cup of water. Cook for a minute or so until the sauce thickens. Pour over the fish and serve straight away.
