Psari Savore – Herring Greek Style

What to do with a great catch of fresh herring! Other small whole fish can be used, or even fillets – but we normally use herring for this recipe.

Ingredients:

  • 6-8 fresh herring
  • Plain flour, seasoned with salt and freshly ground black pepper
  • Olive oil
  • Fresh rosemary sprigs, finely chopped
  • Garlic, 2-3 cloves, crushed
  • White wine vinegar – about quarter of a cup
  • Water – about a cup
  • Currants – about half a cup, plumped in hot water and drained before use

Method:

Cover each fish in flour and shallow fry until golden.  Place fish on a serving platter and keep warm.  Pour any extra oil out of the pan, leaving about a tablespoon.  Add garlic, rosemary and a tablespoon of the flour to the remaining oil and cook gently until the flour turns light brown. Add vinegar and currants, and about a cup of water.  Cook for a minute or so until the sauce thickens.  Pour over the fish and serve straight away.
