Revithokeftedes – Chickpea Patties

 

These delightfully crunchy patties are family favourites.

Ingredients:

  • 2 cups of chickpeas which have been soaked overnight
  • 1 medium onion, grated
  • 1 cup SR Flour
  • Large bunch fresh parsley
  • Salt
  • Freshly ground pepper
  • Olive oil

Method:

Put chickpeas with a little of their soaking liquid into a food processor along with the grated onion, parsley, black pepper and salt.  Process until all are blended but the chickpeas still retain some texture.  The mixture should be quite wet.  Fold self raising flour into the mixture until it holds its shape but is not too stiff.  The mixture should be set aside for an hour before using (but I usually do not do this).

Heat olive oil in a frying pan to shallow fry and place dessert spoon sized mixture into the oil. Cook for 2-3 minutes on each side until golden brown. Drain on paper towels.

Can be served with a squeeze of lemon.

Note: Do not ever be tempted to use tinned chickpeas in this recipe.
